What and How Shinobu operates “Shindofuji” in Ireland.

“Shindofuji” is a term, which is based on Buddhism and it's also very important macrobiotic term, which means the body and the land where the person lives are indivisible.

Shinobu cooks tasty dishes with European ingredients by using Japanese condiments, such as Miso, soy sauce, mirin, amazake, salted rice malt and etc...

She suggests that we should/can create dishes our own way to cook with joy by using local ingredients. That will brings you a great health benefit.

Macrobiotic Mini Ball Sushi Plate

  • Sushi Rice:e-zu (Umeboshi Vinegar) + Rice syrup

  • Toppings of Sushi:Shi-takeh mushroom simmered in seasoned broth, Pickled carrots and cucumber, Beetroot cooked in soy sauce and mirin + rice syrup + Dashi stock.

  • Side Dishes:Tempeh stew with mushroom and onion, Radish cooked in Dashi, soy sauce and mirin with miso sauce. Parsnips and carrots layered casserole, Pickled red radish and kohlrabi.

Shinobu carried out the following demonstration of cooking healthy dishes at Melt Natural Healing Centre and at Clonskeagh Castle in Dublin.
